I. Brief Introduction:
Alpha-Amylase is made of Bacillus Subtilis in the Fermentation and
extraction method, is widely used in the liquefaction of starch
sugar, alcohol, beer, monosodium glutamate, animal feed,
Fermentation industries and textile, printing & dyeing,
de-sizing and etc.
II. Definition of Activity:
One gram of solid alpha-amylase powder ( or one milliliter of
liquid alpha-amylase) at 60°C and pH6 liquefies 1 mg of starch in one hour is defined as one
enzyme activity unit and marked with u/g or u/gml.
1. Heat stability: Stable at 70-90°C or below;
2. pH Stability: More stable at pH6.0-7.0; Optimum operational pH
